So, this guy on YouTube has video of his Samsung Gear S running Android 5.1.1 Lollipop OS. Is anyone else running this OS on his/her device?

It seems like it's not fully done, yet, but I wonder if anyone else tried this.

You can go to XDA site for the development threads for details. Knowing this:
    * These custom ROMs are only for GSM versions of watch with unlocked boot loader. So, it won't apply to Verizon's CMDA version.
    * AT&T version (GSM) of Gear S is known to have locked boot loader. So you will never see any custom ROM for it.

    So, which version can oblige?

Also, how do you know which one you're getting? Are the model numbers different? What are they?

For US, the only other GSM version if the T-Mobile version and it probably has locked boot loader as well but who knows. You will find out if you try to flash ROM and it failed

International versions won't work in US as cellular bands don't match.

The watches all have similar model number with a few letters after it to indicate the different regions and carriers. Sometimes, it is not that obvious. Samsung always makes million different variants for any of its phones or watches.
