    Both seem to work well together.
    However, I don't wear the S2 every day.
    Before I had the watch S-Health worked independently quite well.
    Now it won't work at all if the watch is disconnected.
    Is there a workaround that can be done without unpairing the watch?

    make sure you're running the latest version of Samsung health. My phone keeps track of its own steps unless I tell it to sync with gear S2, but it seems to have started this through Bixby.

    How do you tell it to sync with your gear, or, otherwise, not sync with your gear?

    you can open S health and see if the steps match your gear S2. Also, it will say "last synced...and then day/time" I believe.

    I have a work phone, personal phone(neither one a Samsung phone) and a Gear s2, all 3 are always a little off even after syncing the Samsung Health app. I have noticed since getting my S2 that the Samsung Health app on the connected phone is keeping my phone awake a lot more its always the highest battery consumption app now.
