How to uninstall latest android update from my z3 tablet it can not read my usb

You can't uninstall the entire OS (which is what the update gives you - the entire OS. Instead, install the previous version right over the current one. (If there's anything on the tab you need, back it up first - see Backing up an Android Device - because flashing an OS [a ROM] will wipe the tablet.)
