Galaxy Note 2 Email Settings

I just purchased my Note 2. I immediately noticed some strange happenings in my emails settings. I setup my Pop3 account and have noticed that when I reply to emails, I am being copied on each email I send. I have the setting turned off for this but yet my email still gets added to the address in the CC listing. Another thing I found is that the notification ringtone that is being used is different than that listed in my settings. Anybody else noticed this? Am i missing something simple?
