This is a known issue. If you pay for a keyboard app and set it as your default keyboard, whenever you power cycle you will find the Samsung keyboard is back as the default keyboard. This doesn't happen with free keyboard apps. This problem has supposedly been fixed in 4.2 although I had heard that that is not so for the ATT Galaxy S4.
Since non-rooted ATT Galaxy S3's still haven't even gotten 4.1.2, it may be a long time for this stupid problem to be addressed.
There is one way around this: if you can upgrade your keyboard app to paid via an in-app purchase, then it doesn't get reset by a power cycle. I can verify that this in fact does work for the Kii keyboard app. I am using it now, having upgraded to the paid version and even though I power off the phone every night, it remains my default keyboard.
