Root and custom rom

Could someone tell me what the best rom is to download.i would like the new touch wiz ui and android 2.3. Also what would be the easiest way to root and load rom.

No 2.3 roms yet that I have seen for infuse.

Theres not to much of seeing ROMS over here in this forum. XDA developers has a development forum for the Infuse. They have Devs in there that have made ROMS. I dont think they have successfully put TouchWiz 4.0 into one yet. But I think the Infused Rom they have is knocked off of GingerBread. Head over to the forum and check them out. I might take a crack at one myself eventually.

Quick question, once I flash to Infused, will I be able to update to Gingerbread when is available? Also, will I be able to get updates as they are released?

You will be able to, it just won't be a straight upgrade. You may have to revert back to stock, the devs may incorporate it into a ROM. Depends on what works out best, there will be instructions once it comes out.
