I finally tested this out more and found that I can notice a slight difference in quality from 1080p to 1440p. The only reason I don't notice as much as regular screens because video is moving and it's more difficult to detect.

I'm one of those people that can easily detect the difference between a 1080p and 1440p screen. I guess I'm a close user.
