2 identical Note9s on T-Mobile, different YouTube on each

So I have two Note9s in my possession, both blue 128GB T-Mobile versions (which I wouldn't even think should matter or be relevant in this case).

However, only one of them has YouTube's "dark mode" available in Settings > General within the app. Both have been updated to the latest available version of YouTube within the Play Store. What gives?

Yeah Google randomly decides to flip the server side switch. You might think it's on per account basis, if you have on your account on one device you will have on others. But no

Yeah they need to stop playing around and give everyone dark mode already.
