I was really determined with the S8 to keep everything stock but some apps i just cant stick with! The messaging app for example is actually great BUT doesnt allow me to customize the chat bubbles and because its currently all black (background and bubbles) It just looks crap! I may download textra but iam wondering how do 3rd party apps fare compared to stock where battery life is concerned? If i replace 4/5 stock apps with 3rd party apps then is it an unnecesssary battery drain? I basically wind up having 2 apps running in the background for the same job only one app is used for!

What are your general thoughts on 3rd party apps over stock?

On a side note! Why dont samsung let us change the bubble colors like they did on the s7 edge

I don't know about bubbles options as I barely use SMS, but for about the rest, the only time I use almost all default apps is when I use a Galaxy phone, with the exception of the Keyboard I think I'm using all Samsung apps this time, to me all of them are working great, including the browser over Chrome.

BUT, if you simply don't like them then try to disable them from the App settings, some of them are easily disabled, for the stubborn ones then your best option is a Package disabler app, but be sure to know what you are disabling and don't begin doing it like crazy without knowing what features or services you may affect and you may want or need.
