I was wondering the same thing. I have an unlocked S21 Ultra on AT&T in Northern Virginia. I am only showing 4G LTE on the status bar plus I have the Cell Network Info app which confirms LTE. According to AT&T's network map, I'm in a 5G area. I have an unlimited plan which should include 5G. I'm wondering if I need a new SIM for 5G as mine is a couple of years old. Guess I'll call AT&T and see what they say.
I don't know how true that is , I'm using same Att sim from last year and I get 5g on my Note 20u and pixel 5I believe you do need a new AT&T SIM card. When my wife upgraded to her iPhone 12 Pro, AT&T said she needed a new SIM that would connect to the 5G network. For my S21, I ordered an AT&T carrier version which came with a new SIM card that had "5G" printed on it.

Yeah you need the upper tier plan to get 5g and APN is same as mineOk, I called AT&T and they said my older unlimited plan did not include 5G. They switched me to a newer plan. Icon in status bar now shows 5G. IF I go into settings, Sim card status it says mobile voice network type is LTE. They said my Sim card should be fine for 5G. Knowing AT&T, not sure if I can believe their 5G Icon is accurate. Speed test shows 156 download and about 20 upload. I did notice under APN settings, instead of ATT Nextgenphone it now says ATT Enhanced phone. Who knows?
