Which should I buy of nexus 7? I dont watch movies on my phone. I use it mostly for apps,i might root it, typing letters, emails often, gps navigation as a realtor often, tethering likely, photo slide show, pdf files often, data entry, calendar, music maybe but Not so much cuz I have an iphone. games often, I like strategy etc, not fps on tablets or smartphone.
also reading pdf books. Note pad often.

Any opinions?

Opened mine 3 days ago and I'm already at only 3 gigs left. I downloaded Transformers so I could watch it offline yesterday and have installed probably 20 apps (normal apps no huge games). I store all of my music in the cloud and don't really have any large files on here except the movie and I'm pretty darn low. I would honestly recommend the 16 even if you are trying to move towards using as much cloud storage as possible as I am doing, it's nice to be able to download a couple or three movies for a long plane ride or something where you won't have WiFi.

I vote for 16 since its only $50 more. I don't have a ton of stuff on my N7 but I decided to go for the 16 to future-proof it a little. I figure this way the tablet will suit my needs for a long time.

As you mentioned tethering and also that you have an iPhone, I'll just mention that I tethered my N7 with my 4S today and it worked beautifully. I had tried it before on a Nook tablet and it was hideously slow. I was really quite pleased with the results today.

Also you can upload your music to Google Music. I uploaded about 1200 songs from my iTunes. Should you decide to go with the 8 gb, that will save you a lot of space. I was incredibly impressed by how well my music streamed. It sounded really good! I did that over wifi, of course. I wasn't tethering for that. I only tether for basic stuff as I'm trying not to get caught by AT&T!

Anyway, I still think you should get the 16 if its in your budget. That way you don't have to fret and worry about what your putting on the device!

I got mine from Staples and the 16 GB model was the only one available. So the choice was clear. I have a Kindle Fire which has 8 GB that I sold to buy the Nexus and 8GB is fine if you don't want to download movies and lots of music files. I would still have bought the 16GB given a choice.
