Do you need a launcher to change icons besides the ones Google themes for their apps? Does the camera have any actual manual settings besides the sliding bars. Would be nice to control fstops shutter speeds etc any camera alternatives available in the play store?
 
Yes, on a Pixel, you need a 3rd party launcher to use custom icon packs.

The Pixel's camera app doesn't have any manual settings like that. You'd have to try a 3rd party camera like Open Camera or Manual Camera.
 
There is a way to change them manually using shortcut maker from the play store. But it seems like a big hassle to me. I am using a third party launcher to change mine.

Does that app work by actually editing the app's shortcut icon, or does it create a 1x1 widget that acts at the app shortcut?

It's a small widget icon which directly takes you to the app ...you can use any icon pack you have for it ... it's not bad I've used it on my Fold 3 homescreen...
