After we download the roms, updates, zips etc to our SD cards and we flash the new roms, updates etc can we then delete them from the card? Are they needed for recovery to do restore fuctions?

You can delete everything from the sd card once flashed. I would highly suggest making a ROM backup and keep that on the sd card just in case you need to restore while on the go. I keep a copy of the ROM on my sd card just in case I want to re-flash and erase all traces of themes/modifications.

I usually keep the latest on on card too. Like yesterday, I flashed 1.6.3. Everything was awesome until I tried some ill advised custom modifications through root explorer (lolz @ me) and froze my phone on boot up. I pulled the battery, booted into recovery, restored my phone, and reflashed my 1.6.3 rom back to heaven. Glad I didn't erase it yet.

You can delete the rom/kernel/mod zip files from the roms if you dont want them, but you HAVE TO MAKE A BACKUP like srk and sodev have mentioned. Otherwise if something goes wrong you will have alot of work to do getting your phone back in order.

Thank you for the info, I thought I could but just didn't want to mess anything up since its all running so good!

I generally keep 2-3 ROMs and 2-3 Kernals on my SD card as well as 2-3 backups.
I had an issue where a backup I used was bad, I had to go to a prior backup...and it was a little more work to get it where I wanted it. But it was a lot less work than starting from scratch...
