"All apps" and categories

OK...I don't know if I'm missing something, but this is bugging me. When I press the little up-arrow button on the home screen...

...I get a list of all my installed apps and the screen's title is "All apps".

Is there a way to have other categories of apps? I know I can customize my screens to have icons for different apps...I've done that and it's great, but it seems like there should be a way to categorize apps (utilities, games, news, etc) and view all the apps in each category. Is there a way to do this other than trying to jam all the apps for a certain category onto one of the 7 screens?
 
Only way that I am aware of is to add folders to one of your 7 sceens and drop apps into those folders. You can label your folders whatever you want. Pretty sure you cant customize the app tray.
 
There are a few apps that will do that. Apps Organizer from market is one off the top of my head.
