If I look at settings > applications > running services I see that on at the bottom of the list it says:

Other: 81 MB in 4 .......................Avail: 188 MB + 210 MB in 52

What does all that mean? Am I overtaxing the processor with those numbers? What is the minimum that must be in the Avail: section for processor to be running at a good speed

As long as you aren't rooted and overvolted, your device has limiters that will not let the processor overload. Now if you root and overclock, all bets are off.

Also, processor is listed in hertz, not bytes like what you are listing. What you list appears to be RAM utilization.

All in all, no worries.

I know that my Droid 1 ran slower and.slower sub more.crashes as I added apps. I'm trying to avoid that in this phone. I noticed it took a long time to close akradio yesterday.

I'm obviously using the wrong terminology but i know the phone has already gotten balky as I've added apps. Too many running at once slows and occasionally jams the phone. I really don't care why but it would have been nice to analyze quantitatively instead of adding apps then being forced to uninstall them.
