anyone know of a waterproof case for the 8"?

I don't know of cases for tablets like that, just pouches. You won't be able to use the screen underwater, though, and some might even prompt weird 'touch inputs'.

I use one with my tablet while on the tub or the jacuzzi to read or watch movies, but if too much water gets on the screen or if I submerge it, I get all kinds of weird screen inputs and using it becomes impossible until I wipe the water off the screen.
 
Then a pouch should be more than enough. Like I said, it only becomes 'unusable' if you submerge it (it still works, it just registers a bunch of touch inputs because of the water). But it's still perfect to keep from splashes, spills, and you can see the screen just fine.

If you want to record video underwater with it, make sure the pouch you buy has transparent plastic on both sides or has a large enough 'window' so it doesn't cover the camera. Same thing if you want to use the front camera as some pouches have dark plastic around the edges.
 
Actually, that was the first thing that I thought of... I wouldn't trust it though.

They're OK for splashes, but wouldn't trust the seal. ZipLoc bags aren't entirely reliable and the plastic is more frail than a phone pouch, so it can get a tear and let water in more easily. But sure, that will work if nothing else is available.
