APN for Straight Talk reverts back to AT&T APN

I just bought a S2 Skyrocket from Amazon for my wife. It was new and unlocked, but arrived with the AT&T APN. As I was going to activate the phone with an Straight Talk (AT&T) sim card, I contacted Straight Talk's Bring Your Own Phone department to get the correct APN for the phone on their service. I went to the phone's APN page, selected "Add APN" then entered the settings Straight Talk provided. I saved the changes and selected the new APN for the phone. I tried to delete the original AT&T APN, but all the phone would let me do is "Disable" it.

The Straight Talk APN worked fine yesterday, getting us very good down and upload speeds, however today I could not get the phone to connect to a webpage without using Wifi. I went back to the APN page and found that the phone had deleted the Straight Talk APN entirely and had reactivated the AT&T APN. I re-did the setup of the Straight Talk APN and again the phone was working fine.

What allowed the phone to delete my APN and revert back to the original one and how can I stop it from happening? I tried to install the app "APN Backup & Restore", however it can not delete or restore APNs on a phone running Android 4.0 and above. Any suggestions out there?

Also, if anyone is interested, here is the APN settings Straight Talk gave me for this phone on their BYOP service.
