Application installation and settings are stored where?

Some applications in the android market seem to make folders on my SD card to store caches or settings in, even though the application is still on the internal memory and hasn't been moved to the SD card.

But for the Thunderbolt, it has 8GB of built in memory which is more than enough space for every application I ever want to install. I don't want android putting any weird files on the card. I'd like to know what every file and folder is on my SD card because I put it there. I'm already going to drop my whole music collection onto it which right now is 18GB. Then I'll load a bunch of my favorite movies and pictures.

But right now when I mount my droid sd card, I have to wade through all these folders that I have no idea what app they are for and what they contain and if I can delete them. It just looks ugly. But I dealt with it because I knew there wasn't enough internal memory for that stuff.
