Verizon Samsung Galaxy S3 is missing a few settings that we are used to with our previous phones. I had to download couple of apps for simple things as turning off 4G and using 3G only or keeping screen on while on charge. I am posting the links here. Hope this helps someone.
"Screen on" will keep the screen on while charging and also while using the apps your specify.

Phone Info can be used to turn off 4G and use 3G only (to save battery if there is spotty 4G coverage).
