Firmware G998U1UEU4AUF5 is out now for unlocked S1 Ultras in the US (no new security patch, still Jun 1). It's downloadable via Frija (CSC: XAA) if not yet available OTA from your carrier. The bootloader-number increment (from 3 to 4) implies that once you upgrade to AUF5, you no longer have the option to downgrade to an earlier firmware version.

Yes, when a firmware update is available at all via Frija, it's also available OTA from some carriers. You can look at sammobile to see which carriers have it: https://www.sammobile.com/samsung/galaxy-s21-ultra/firmware/#SM-G998U1 .

Yes, it's the 2nd update released in June for the G998U1, and also the 2nd update at the June 1 security patch level. The first such update was AUE3.
