Auto saving versus manually closing and saving a file.

I opened a new spreadsheet with just empty cells. I typed a small amount of text into three of the cells and when Excel automatically saved the file it took 2 minutes to do it. If I hit the left arrow to close and save the file it does so in less than 5 seconds. What's going on? Why the difference?

When you say it took 2 minutes to save, is it some indicator at the top or bottom of the screen that the file is saving, but you can still work on the file? Or is it a "Saving" notification that appears in the middle of the screen that prevents you from doing anything else? (Sorry, I don't use the Excel app, so I'm not speaking from direct experience.)

If you exit Excel in the middle of the 2 minutes while it's automatically saving, and then open Excel again and go back to that file, are all of the changes there? If so, it's probably just some glitch where the "Saving" indicator stays on for too long.
 
I've noticed long save times with my S21 in one app. I just reread your post and you didn't say what device you're using so this may be slightly different if you're experiencing this on another device. Anyway, I can't explain the long lag time when it comes to saving the file and in my case it does come with a saving banner that halts work. If I exit out of the app it's about 50/50 if the file will be in the actual save folder. Luckily if I open the app the my last work is displayed but I can only access it from the save folder which means that I occasionally have to attempt a second save, which is 60/40 on being faster then the original attempt but is in the save folder 90% of the time even if I exit while it's "saving". I recent got an update to the app that improved these numbers but haven't used it enough to really know if the update cured the issue.

My advise on this would be to ensure everything is saved where you can reach it, then clearing the cache and data for the app and uninstalling it. Then install a fresh copy of the app. Clearing the cache and data just insures no leftovers get carried over to the fresh install. You could also just check to see if there are any updates for the app first but I imagine that you're up to date in which case a fresh install may be all you need.
