Back to 4.4.4 and rooted, then YouTube interface sucks. Why?

Hi, I recently received the Lollipop update, actually 5.0.2, and even though it was supposed to correct the 5.0 errors reported, it didn't. My Nexus 7 2012 was almost unusable, so I decided to switch back to 4.4.4 KitKat following an online tutorial. I had some setbacks, like getting stuck on "sending system" message, then getting only "Google" screen with an open padlock, etc. All of this said, I finally got to force-install Android 4.4.4 and it was working fine, except for two things:
1) I can't avoid automatic update to download Lollipop update (I don't want to accidentally install it)
2) When I opened YouTube I realized its interface pretty sucked. Why didn't it keep its original look and feel?
Previously:
I was able to click on the upper right corner on the user nickname and see the video details, plus I could see people's comments separated like by a line.

Now:
The information about the video is underneath the video itself, its name is in bold letters and people's comments seem mixed up. I mean, there's no separation at all. Plus, I see that awful red bar on top of the screen to search for videos.

Why is that?
I went to GooglePlay trying to update youtube, but it seems up-to-date so I can't force its updating.
I guess this is the YouTube version that came up with Android's stock version but... it's 4.4.4! Shouldn't it be the last one? Or is the actual last version of YouTube so crappy?
