Wondering what cautions one should take when changing from one battery to a backup as in not losing all info on the phone. Also wondering how many of us have a two battery habit?

Not sure but the phone should have a internal battery to hold info for some time. I pulled out my battery twice since launch and have not had any issues when placing the battery back within a minute.

I really don't think that you have anything to worry about as long as it's the same Motorola OEM X battery. Now if you're using a cheap aftermarket battery you could have battery problems but just popping out the battery for a battery change won't erase any data.

I don't have a two battery habit yet but that's because I have chargers everywhere (home, car, work, in my work bag, etc.)

Its flash memory it doesn't require power to keep your files backed up, just like the removable drive you might be carrying around. I have pictures and files on a flash drive thats been sitting well over a year without power and their still there. It will have a small battery for setting and the clock just like a laptop and digital camera. I only use one battery for my phone the price of the phone is enough as it is!
