What do the different colors of the Mobile network signal of this graph represent?

They represent signal strength, being green the best and red nonexistent. Orange means bad signal and that brown you get is kind of weak signal, about 2-3 bars.

How do you get that screen back, the updates took that screen away and replaced with a crappy new screen that doesn't show how many hrs/secs you have been running, nor the graphs you mentioned?

Welcome to the forums. It looks like he's still using KitKat or some module. After Lollipop the background for that screen is white and you can get it if you tap on the main battery graph. Doesn't work for you?

Correct. I've never taken the upgrade. I'm too frightened to do so, since everything is working the way I like it right now.

Only thing in finding is that my battery life is shortening.
