Is there a way to turn off beats or adjust it somehow. When played through my car stereo it has too much bass and distorts at higher levels.

Not without rooting. That is the only way I know to turn off Boomsound.

I honestly can't remember. I haven't been running stock Sense since May.

Yes there is, but it can't be turned-off when using the M8 built-in speakers, which shouldn't be a problem for the OP as he wants to play music/songs through his car stereo, so he should be able to turn off BoomSound as soon as his M8 is connected to the car stereo.

Not if he's connected through Bluetooth. Just connected to my car with Bluetooth and you can't turn it off, still grayed out. However, if he connects with an auxiliary cable, then he should be able to.

Yeah, same thing here when connected to my car's Bluetooth. I have ViperONE ROM installed and I'm sure I can find a way to do it since custom ROMs and/or rooting truly open the door to endless tweaks.

Thanks everyone. Auxiliary cable works fine. No problems at all that way.
