Well, first, I think it's best to set realistic expectations. It's a phone first and foremost.... A camera (ESPECIALLY a ffc) is really just icing on the cake.
Now that the rant is out of the way, hard to go wrong with Vignette. They have some options that let you really tweak the camera settings. Because of all the processing, it's not the fastest, but it does well. They even have a free demo so you can try it for a month before you spend the $5.
The other (or complementary) option is to download photoshop express. It's free, and it lets you really clean up the photos post-shot. I've saved a few that I thought were bad. But it has it's limits.
Summary, there are a few options out there, but the honest answer is that the current line-up of phones is not going to replace medium/high end point-and-shoot. If you insist on using your camera for such, be sure to have good lighting (helps tremendously with the Evo), and don't be afraid to change your settings depending on the situation.
