So, I just rooted and flashed AOKP (ICS) to my GS2, and I kind of miss the stock camera app. Has anybody tried to install the stock camera.apk while running a ROM?

Could be wrong but AFAIK, it doesn't work because the stock camera apk relies on the Touchwiz framework. It's the one thing I miss as well.
