Can I get some help with the difference between skins?

difference between skins.

Can some one explain to me the difference between the different manufacturer skins? I hope I'm using the correct term. I'm currently using an HTC One (M7) on Verizon. My previous phone was an HTC Rezound. I know HTC uses Sense and Samsung uses TouchWiz. What do the other manufacturers use? Which is the best or the one that you prefer and why you like it. It's getting time for a new phone and would like to know my options. All I ever seem to hear about is Sense and TouchWiz.
