can I stop the app that I am NOT using on my galaxy s5 active and will my phone still perform

I am trying to save battery power can I turn my apps off that I don't ever use and will my phone still perform the way it should

Try uninstalling them. For those you can't uninstall, you can probably disable at least some, maybe all of them.
Go to: Settings > Apps > select app to disable > Disable.
The phone will work fine unless you uninstall or disable something you actually do use. But don't expect doing this to make a big difference in the battery.
