Can you flash an unlocked phone to a different carrier's firmware?

I bought an unlocked s7 but it won't get any updates from at&t. So can I flash my carrier's (T-mobile) firmware on it? Or will that just mess up my phone? Could I install the new at&t firmware on it or will that lock my phone to at&t again? Thanks.
