Yea you have to power the phone off the boot into recovery.

it is volume down for recovery btw.
so what happened when i did it with volume up and it warned me of the risks of installing a custom o/s but still gave me the option although the phone isnt rooted (its unlocked/sim-free though)
is this normal???

With the phone off, hold down home and volume + first....then while those are held down hold power button until you get into recovery.
I've never seen so much confusion to get a phone into recovery. Both are started with the phone off.
Recovery-volume up, power and home. As soon as you see the Samsung on your screen release all 3 buttons. If you release too early it will boot normally. If you release too late it will boot normally.
Download mode-volume down, power and home. Hold all until you get a warning, then press volume up.

I just need to hold vol down and home o mine. Also I can keep them held down until the cwm screen pops up.

No, down boots into Download mode. Up is for Recover mode.
