change automatic qwerty keyboard to the yellow pad keyboard

Is there a way to change the keyboard be the hand writing option without having to hold the microphone button

You can change settings to turn to handwriting when you take the pen out.

I have that option turned on but it still defaultsto the QWE RTY Key board

Which app are you using it on? And for that matter, are you using Samsung's stock keyboard? Not all apps support HandWriting mode (for some odd reason) and unless you use the stock one, the option you mention will not have any effect.
