Changing Default Launcher

I recently downloaded the Ginerbread Launcher from Steve Lin because i'm over Sense and want something closer to Stock Android without rooting.

When I hit the home capacitive button it gives me the option of Sense or Gingerbread. I'm tempted to make the Gingerbread launcher my default, but I don't know how to change it back to Sense in the event I no longer wish to use it.

Is there a simple way to change the default launcher in Android?

Just download Launcher Switcher from the android market. It's free and easy. I have a few different launchers that I like to change around whenever I get bored.
 
Go ahead and make it your default. There are two ways to change it back. You can find the Gingerbread launcher in "Manage Applications", open the app information, and hit clear defaults. OR the much easier way is to download Home Manager. This allows you to see all of the launchers installed on the phone, set a default, or clear the current one. There are also several other apps that do the exact same thing (like Home Switcher for Froyo or HomeSmack).
