I have rooted my DInc. and I'm looking at switching to CM 6.1 but I don't like some of the stock icons. Is there anyway to to change these icons and if so could someone include the method as I am extremely new to this rooting/moding things.

You can use an app called desktop visualizer which will allow you to make widget and use any icon you have for any application. All you have to do is download it from the market and download some icons you want to use. If you don't have any icons just do a Google search there are tons of them out there.

I have searched Google and found a few I have liked in the past. It requires me to "flash them"....how do I do that?

Can you show me a link where its saying you need to flash them? You shouldn't have to flash them unless its a theme. All you need to do is download them on you computer then connect your phone and mount the disk drive then just drag and drop them to your sdcard.

Each theme is different so I will need to know which one and where it is. I haven't done much with themes but I think some you just flash like a Rom and other require using an app called metamorph which will apply the theme. Just post a link and I'll take a look for you.

I will have to do some research to find the one I like the most. I'm currently running CM 6.1 and it's ok, I had to download LauncherPro b/c I have found I can't live w/o it. Suggestions on themes for CM 6.1?
