CM 12.1 or CM 11?

I'm really liking KitKat better than Lollipop in terms of how quick apps open up, better battery, etc. My only complaint is app redraws. I've tried Nova Launcher but didn't quite like it.

Now I'm planning to switch to CM and see how it is. Should I go for CM 11 since it's based on KitKat (which I like so much) or go for CM 12.1? If you're wondering why I'm even considering CM 12.1 if I like KitKat, the reason is that I'm hoping that 12.1 will be much more better and smoother than Lollipop.

Also, what bootloader version should I have if I am to go for CM 11? Which bootloader do I need for CM 12.1? I'm on KitKat 4.4.4 with TWRP and an available update to Lollipop 5.0.2 (I know because I get the notification everyday)
 
As far as app redraws go, you do realize that once the app is running, the launcher has nothing to do with anything, right?

(My preference is 4.4.2, but only because the Note 3 4.4.4 can't be rooted [AFAIK] and I don't use anything that the OpenSSL bug would be affected by. I'd love to try Cyanogen, but the AT&T bootloader isn't just locked, they welded the lock shut.)
 
The frequency of app redraws has reduced since installing CM 11, although there are a few quirks here and there.

Having said this, would you suggest going for CM 12.1? Also, should I use Cyandelta to get cyanogenmod updates? If I use it I don't have to download around 300 MB every time I need to update my phone. Also, isn't it strange that there's not even one "milestone" version of CM 12.1 so far for this phone?

EDIT: The reason I'm using CM 11 is because I like the KitKat interface better than Lollipop, but if CM 12.1 is offering better performance, then I will definitely get it.

I compared stock kitkat and stock lollipop on two moto g 2nd gens and found that kitkat ran better and apps opened faster, etc.

Now just because this is the case with stock android, is it going to be the same case with CM 12.1 and CM 11 as well? Will CM12.1 always be slower than CM 11 just because the former is based on Lollipop and CM11 is based on kitkat?
