connector pinouts and protocols

Can anybody tell me where to get technical info on device connector pinouts and the digital I/O protocols? (Example: the iPhone has digital I/O on the 30 pin connector.)

I'm interested in the Samsung Galaxy Tab but general suggestions would be appreciated. Does connector info generally appear in the software development kits?
