I haven't seen a setting. When sending it definitely breaks it up, but it'll show it to you as one big message. But as you're typing, the character counter will till you how many messages you've used and how many characters you have remaining. When receiving, it seems to combine them only with messages that have the leading (1/3), (2/3), (3/3)...
Never noticed this on stock messaging app or on GoSMS, but Chomp SMS puts them back into 1 big message.
I'm using Chomp... But regardless of which one I use, Chomp or stock, long messages send and are received split up 1/2, 2/2, etc. I wish they would show as one big message. I wonder why some of our phones are handling this differently.

I know the GS3 and the Evo LTE will combine the messages once received, but I'm not sure about the others.

I don't think so. I have a friend with the Note 2, and his texts are consolidated.
