custom Rom questions

I have the HTC one M8 for Verizon. I recently rooted it and plan to Install Google play edition Rom which I need to get a custom recovery and S-off first. My question is would I be able to return to 100% stock if need be and if so, how?

Yes you can, you will need to use the RUU to go back to factory stock.
