Can anyone explain the developer options or at least the more popular changes and what they do? There are some that are obvious but Some that are trickier like one that deal with Speed

If you're talking about the Hardware-accelerated rendering, unless you know what they do (from a developer's viewpoint), leave them the way they are. The animation scales run the screen faster if they're turned off. Animation takes time. (They just animate things that happen on the screen that work just as well without being animated, like an app opening.)

Aside from the animation, changing from dalvik to art is probably the next most popular thing to do. I wouldn't recommend it as it recompiles apps everytime you reboot.
