Do any of you folks know how to turn the screen off on the S5 and still play a youtube video?

I listen to a great deal of podcasts, audiobooks and music on youtube. Oftentimes I want to work and listen at the same time, so I will put my phone in my jacket/pants/table while I work, but sometimes I will bump the screen while working and it stops the YouTube video or makes it jump ahead/back. Its terribly frustrating. Do any of you folks have a solution to my problem?

That might be difficult. From my past reading on this issue, my understanding is that it violates the Google terms of service for an app to do that, which is why any of those kinds of apps are not available on Google Play. There apparently was some native background listening option that was found in the YouTube app a few months ago, but that didn't seem to survive in subsequent updates.

Is this issue something that can be fixed by rooting your phone? Or is there something else that can deal with this issue? Like downloading a YouTube video directly to Dropbox on your phone and then listening there? Any creative ideas on your end?

You can't. If your rooted and have xposed then you can use youtube background playback. But otherwise you can't

My god, thank you for this. I never knew my rooted S5 could do that.

If you don't want to root you can use Tubemate to download those videos or even as mp3. Then listen to them in the Samsung music app or which ever player you like with the screen off.

I also recall a few older versions of YouTube didn't have that imposed. I don't remember which ones though. You would have to search for those older apk's.
