I followed instructions and rooted my phone, then upgraded to Gingerbread. Finally, I un-rooted my phone with Z4Mod, since the only reason I wanted it rooted was to upgrade.

I had some bumps along the upgrade path, but everything went pretty well. I also uninstalled my live wallpaper, and removed a task killer. However, the phone is running EXTREMELY SLOW. It's almost unresponsive at times. I did not upgrade to get any speed increase, however, I didn't expect it to slow down.

What might be causing this?

first fatal error you made is that you flashed the prerooted Gingerbread ROM when there is a none rooted gingrebread ROM available. Here is the source, MyDroidworld. I bet you experience better results with that build. Unfortunately you're gonna have to SBF back to 2.3.20 then root then bootstrap and then reflash the right gingerbread file. I'd try a factory reset before any of that though.
