Ear proximity disappeared

I had an update last night. It seems that ear proximity has disappeared. I've searched everything in the settings. "Always," "stay," "ear," "proximity". I've looked through every screen and phone setting, too. I hated it when it came out. Now I'm used to it.
 
Which phone? Do you mean that the screen is no longer turning off when you're on a call with the phone against your ear? Or that it's turning off (as it should), but you don't want it to?
 
In most phones the proximity sensor is on the upper front side, so it can detect when your face is next to the display. Try installing this 'AIDA64' app and use it to check your phone's current status. AIDA64 is just a software/hardware auditing utility (long history as a desktop computer utility, now there's also an Android app too).

Install and start the app, and in the list of options tap on 'Sensors'. A listing of the various sensors in your phone will be shown, and it's in real time so with things like the Orientation sensor you'll see the numbers displayed change as you move your phone around. The Proximity sensor should show a larger number and if you hold your hand over the approximate location where the actual sensor is on your phone the number should drop significantly. (on my phone it shows as 100 cm but when I put a finger over the sensor it drops to 3 cm, your results may vary). This is just testing if the sensor itself is OK (hardware), if it checks out than the problem is likely to be some setting or other related issue (software).

Also, do you keep your phone in a case? It might just be a matter where your phone has shifted out of place (with the result being part of the case is blocking the Proximity sensor) so try re-seating your phone in its case.
