I haven't had a set yet that didn't include a way to simply apply from within the icon app once installed, but I've never tried it without a launcher (including the pre-installed launcher).

If you want an easy way to do it you need a 3rd party launcher. Simple as that. I recommend Nova.

After trying out a few sets, even though there's a few that seem like they would apply on the LG Home launcher, nothing happens. Looks like a 3rd party launcher is required.

Used Nova on various handsets. It does not slow your device down. What will slow your device over time is the amount of apps you install and whether they tend to run when not needed. Cache size etc etc.

LG SmartWorld has great themes to choose from. I usually download a theme with an icon pack I like, and then switch around the wallpapers as I see fit when I am in the mood for a change. As such, I get a mixture of different wallpapers and theme icons. And Google Play has a great selection.

Knock on works normally, but to turn off you'll either need to set a gesture in Nova or double tap the status bar.

The gesture in Nova isn't quite the same as knock off because it's an instant device lock. Might work for some but I use Smart Lock and it supercedes that.

Well I don't want Nova. I looked in lg smartworld and I couldn't find any icon packs. Also there was a section for smart bulletin app with nothing there. Is it just me?
