Easy way to uninstall 5.0?

I mistakenly (as in didn't expect the change to be so bad) updated to 5.0, and am hating it. I don't like the new look, or the way notifications come up, and I don't like being unable to customize the vibrate for texts vs. emails. Is there a way I can either fix some of these, or uninstall it?

Hello and welcome to Android Central leafcat!

You cannot uninstall an update and not even a Factory Data Reset will return you to your previous firmware. You will need to download the earlier version for your model of phone and CSC code and flash it via Odin by following the instructions and video contained in the links of #1.11 of 40 Galaxy S5 models - Dummies Guide
 
My wife is still on 4.4.4 but is tiring of the 5.0 update threats. Is there a good way to shut them up?

I'm guessing from your post that you have one of the U.S. carrier minority variants of the Galaxy S5 as the normal Samsung models allow you to refuse updates. I am afraid there are only 2 methods...

1. Root your phone

2. Select update only using Wi-Fi and then never use Wi-Fi again!

I, and I am sure a lot of other users worldwide, cannot understand why certain U.S. carriers force updates on their customers.

Well we use Verizon. I've tried various methods to mute the update request, but it still comes back. So far she just keeps postponing it, but she's VERY high-strung, so each time she has to tap the button to postpone, you'd think she was being asked to do brain surgery. She gets very, very agitated, and it's only a matter of time before she accepts the update, and if she was bad about dealing with the update notice, she'll be absolutely apoplectic at the first thing that 5.0 changes.

I'm not looking forward to this at all.
