5C Android 7, with the @mail application installed in the factory.
I would like to know if there is a procedure to delete an email address that has been collected automatically.

No, when someone send me a @mail, his address is automatically collected.
When I entered the first letters of this address, that is automatically displayed.
If I no longer need this address I want to be able to delete it as we can do in Thunderbird in the list of addresses collected.
I do not know if it is possible under Android because I do not find commands to do this.
Try using the Contacts app to edit/manage your contact listing. Start up Contacts, scroll down to that address you want to delete, long press on it to highlight it, and in the upper menu bar tap on the Trash icon to delete it.
Different apps, like your email app, texting app, etc. all rely upon a central contacts database file. You can use the Contacts app to tweak that database file, and then your other apps index the altered database accordingly.
