Evo LTE Sense and Gmail Questions

I tried searching but I didn't find anything in relation to these issues specifically.

1. Is there a way to set which of the 7 screens is the homescreen?

2. The Gmail app used to automatically have the text fit the screen, however this phone isn't doing this; many of my emails don't fit the screen in portrait orientation (but they do on landscape). I looked thru the settings and only saw options to change the text size. The size is fine but it's not having the text fit the screen.

Tap the Home button, then tap again to get the view with all seven pages. Long press the one you want to move and drag to the new position.

I am seeing the same behavior. Nothing in settings seems to change it. Wonder if one of the browser settings would effect it?
 
The stock mail app allows you to pinch enlarge mail if you need to .

Well in theory you'll be able to read the whole email verses part of it.
