Flashing for first time

I am relatively new to the Android world, but have experience in Linux. My computer ethos is: Give me a stock machine and let me customize my interface, so flashing one of rooted superclean roms seems like my style. There are many great how too's, and Faq's on how to accomplish many of my goals with this thing, but I am left with a bunch of questions.

How should I backup my phone's app's, data, contacts, etc.? God forbid I lose my 3 stared angry bird levels.

How do I get it working with Verizon again after the flash? All my phones to this point have been handed to me working, I assume there will be some setup required after I flash.

back up contacts to gmail. back up apps with titanium back up. you will go through a setup when the phone starts up. just do what it says.
