Galaxy Watch & phone on different networks?

I have Verizon, AT&T & Project FI. My personal phone is on Project FI and I would like to purchase a Galaxy Watch with data service on Verizon so that I can make & receive calls when away from my phone. Right now, I have a Gear Sport and it notifies me of everything using the cloud as long as I'm on wifi. My goal is to extend that to when I do not have access to WiFi and also be able to make & receive calls, texts when I might not be near my phone. Is it possible when the watch would be on Verizon and my phone is on Project FI?
