@rocketsaucev2 instructions are correct. Drag an app or widget to your homescreen and then to the left until an additional screen is created.

You can't create a blank screen, there has to be something on it. Alternately, to delete a screen you'll need to clear it out and it goes away automatically

Have the folks that are using the GEL launcher having any issues? What about battery..doesn't seem to affect it negatively?

Sorry if I'm totally missing something but I normally use Nova Launcher and want to play around with the default launcher. I only like 3 screens but whenever I switch to the default launcher, I am given 5 screens (2 on each side of the "home"). I tried adding a 6th one but am unable to do so and am unable to delete a screen either. Am I doing something wrong? Or do I need to delete the Nova Launcher option from Settings->Home?

sideloaded the GEL onto my X last nite and love it. no problems at all. no affect on battery. only been one full day but battery was stronger than a usual day.

Zero issues for me. Battery seems just as good as always.

Did you sideload GEL Launcher? It's not part of the kit kat update for Moto X. If not, then you can't add homescreens. For now, GEL is officially only available on Nexus 5 (so much for "stock").

By default the Moto X does not allow you to add/delete home screens. You can download and side load the Google Experience launcher which gives you the ability to adjust the number of home screens.
