I can't see why they wouldn't Sprint just released it, most likely they are busy in the labs trying to figure out how they can make money from the update and they want to see how many more "V" apps they can include.
Apparently, there have been some problems with 2.3 on 7" Tabs. My wife just (finally) decided to get a tablet (after lusting after my Xoom since Feb), but opted for the 7" Tab as being a better fit for her needs and being easier to handle and transport.
Anyway, she took it in to her IT Dept at work to let them hook her up to get her work Outlook email and calendar. The guy in charge told her to avoid or delay updating to 2.3 as he had a good friend who had some serious issues after updating his Sprint version of the 7" Tab, and had been hearing that the problems were somewhat wide-spread. [perhaps Verizon has been wise to delay it?]
I updated to 2.3 the same day it was made available for my Droid X phone, and had some serious issues, especially with it having instance where I could not make calls nor send texts with having to reboot it (if a phone's "phone" capabilities are compromised, I consider that a serious issue). Finally, a bug-fix update came out yesterday and seems to have my phone working better.
I agree it's seems annoying that Verizon doesn't seem to get OS updates out as fast as other carriers (for the same equipment). Not too long ago, I was carping about how they delayed 3.2 for Xoom's (the WiFi only models got it weeks earlier). But, perhaps I should have appreciated that they chose to fully test the update out to ensure proper functionality before releasing it. Maybe they are actually learning from their mistakes (hey, it could happen).
